
Boiled Owl Coffee Roasting Company (Boiled Owl, LLC.) officially became a legal entity in the State of Illinois on July 24th, 2023.
Boiled Owl Coffee sold its’ first pound of coffee on July 20th, 2023. The idea of roasting coffee began long before as I sampled coffee roasters and coffee shops throughout the United States seeking, learning, tasting, and becoming very interested in the process.
"Coffee: a beverage made by percolation, infusion, or decoction from the roasted and
ground seeds of a coffee plant." - Merriam-Webster.
Amazing to me that supposedly in the 9th century a goat-herder named Kaldi from the kingdom in Ethiopia called Kaffa noticed his goats acting erratically when eating the fruits of mid-sized, dark green shrubbery that had yellow and red berries. After bringing these berries back to his monastery for explanation, the chaplain then threw these “devilish temptations” into the fire. It was then discovered a unique and aromatic emanating from these burnt berries. I prefer this roasting process over eating them.
And here Boiled Owl sits in its’ infancy in the midst of an estimated (at least as seen on US maps) over 2000 U.S. roasters sitting in an estimated market at $112.86 billion in 2025 which is expected to hit 167.72 billion by 2034, registering a 4.5% CAGR from 2025 to 2034.
It seems that the demand for aromatic, fresh coffee is big.

I am Steve G., Founder, Owner, and current roaster of Boiled Owl Coffee.
It all began for me when I tasted some horrible coffee that many other seemed to be drinking with impunity. Disgusting I thought.
This was in early 1992.
Then I tried some other coffees from other roasters and found a few that I really enjoyed. Since then I have been exploring coffees from around the world and roasters from around the U.S. studying and learning, which I very much still am, I gravitated towards the ones that I really liked and thought were consistently flavorful. I learned how they were roasting their beans, and where they were getting them from.
Initially my desire to roast coffee began in my back yard and on my front porch down here in Flossmoor, Illinois. I still roast from here as we await our initial store/shop. I read a few books, watched many videos of roasters, of different equipment, different beans, different methods and came to the conclusion that I could do this and I wanted to do this.
With much to learn and experience, I set out on a course to deliver the best tasting, highest quality small batch
roast-to-order coffee we can make.
